    Dark Chocolate Beet Donuts: vegan chocolate baked donuts by Little Miss Bakery

    After New Years, I powered strong into my workout and plant-based eating regimen. It’s been a great two weeks, but it’s about that time when the cravings start to set in. I’m dreaming of baked goods and chocolate, so I started to research. What can I do to make this fit into my healthy diet?

    I’ve baked with a few different flours before, but nothing is quite like all purpose flour. Whole wheat flour weighs down baked goods, and oat flour is very thick and absorbant. Almond flour is great for a partial substitute, which I included here, but, in my opinion, nothing tastes as good as the processed all purpose flour. Because I don’t eat it often, I decided to go for it. If I’m going to eat a donut, then let it be the best donut I can muster! And quite the treat they turned out to be.

    These vegan chocolate baked donuts are a dark chocolate lover’s dream.

    Not that sweet, but rich in that bitter dark chocolate taste I love so much. Thick and cakey, with the perfect touch of sweetness from powdered sugar. Yum! My recipe was based off of this wonderful find from the Minimalist Baker. I’m sure hers are very tasty as well, and obviously mine are not gluten free.  These are also not plant based because they contain a little too much processed flour and sugar to qualify, in my opinion. But this is what I’m all about. Sure, I make some truly plant based desserts around the house but I still crave a delicious, cake-y creation every now and then.  I haven’t found a plant based way to that yet and, in my quest to love my plant based diet and not resent it, I bake as healthy as I can without sacrificing indulgence.

    A healthy lifestyle is all about being informed, having good habits and enjoying moderation. If you have great daily habits, you can enjoy a little moderation here and there. But make it pointed enjoyment – there’s nothing worse than craving something and eating a lot of a crappy version of that thing and being left feeling unsatisfied. Treat yo’ self to the best and enjoy every bite! It’s once of the most wonderful things in life.

    Dark Chocolate Beet Donuts

    Serves: 9 Cooking Time: 45 minutes

    Ingredients

    • 1 flax egg
    • 1/2 cup unsweetened coconut milk, warmed
    • 1/4 cup + 1 tbsp melted coconut oil
    • 1/2 cup dark brown sugar
    • 1 1/2 tsp pure vanilla extract
    • 1/4 tsp sea salt
    • 1/2 cup beet puree (1 medium beet)
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 3/4 cup unsweetened cocoa powder, sifted
    • 2 tbsp instant coffee
    • 1 tsp ground cinnamon
    • 3/4 cup almond flour
    • 1 cup + 2 Tbsp all purpose flour
    • 5 oz vegan dark chocolate
    • Powdered sugar (optional)

    Instructions

    Prepare the beet purée. Peel the beet. Cut into 1 inch chunks. Place into small pot and cover with water. Bring to a boil over high heat, the reduce heat to simmer, keeping pot covered. Cook for about 15 minutes or until beets are fork tender. Strain from water. Purée in food processor.

    Combine salt, baking powder and soda, cocoa powder, coffee, cinnamon, almond flour and all purple flour in a bowl. Whisk together.

    Preheat the oven to 375F.

    In a stand mixer, place the melted coconut oil, Brown sugar, flax egg and beet purée. Mix well on medium speed. On low speed, add half the flour mixture until mixed, then the warm coconut milk until mixed. Use a spatula to scrape down the sides of the pan. Then add the rest of the flour mixture and mix, over high heat for a few seconds at the end.

    Grease 2 donut pans. Spoon batter into a ziplock bag (it will be thick) and snip off the corner to leave an opening that is about 1/2 inch in diameter. Squeeze dough through the opening into the donut mold.

    Bake for 15 minutes or until toothpick comes out clean. Allow to cook a couple minutes before moving to a wire rack. Allow to cook there for about 15 minutes.

    Use a double boiler to melt the chocolate, or bring water in a pot to a boil and place a metal bowl above the pot so it is heated by the steam but not touching water. Stir chocolate until it is smooth and all melted. Drizzle over donuts. Allow to cool for about 10 minutes. Sprinkle with powdered sugar and serve!
